Ingredients
- 1/3 cup toasted quinoa
- 1 cup chocolate chips
- 1/2 cup pistachio butter
- 1/4 cup tahini/nut butter
- 3 tbsp maple syrup
- 1 tsp vanilla extract
- dash of salt
Instructions
Step 1
toast the quinoa by heating up a pan on medium heat and placing the quinoa into the pan until you hear popping noises – stir every few minutes to avoid burning
Step 2
mix the pistachio butter, nut butter/tahini, maple syrup, salt and vanilla extract together until well combined
Step 3
pour in the toasted quinoa and mix in until well combined
Step 4
melt the chocolate chips with (optional) coconut oil
Step 5
use half the melted chocolate to line the bottom of a silicone mini muffin mold
Step 6
form the quinoa mixutre into balls and place it one on top of the melted chocolate
Step 7
pour the rest of the melted chocolate on top of the quinoa and freeze for 1 hour. pop out and enjoy!
