Ingredients
- ½ cup quinoa
- ½ cup chocolate chips
- ½ cup peanut butter + more for the center
- Optional: 1 tbsp coconut oil
Instructions
Step 1
Toast the quinoa – do this by heating up a sauce pan, and pouring in the quinoa and letting it toast until you hear popping noises. Keep stirring for another minute or two to avoid burning.
Step 2
Melt the chocolate chips (with coconut oil) and mix in the peanut butter
Step 3
Then mix in the toasted quinoa and stir well
Step 4
Scoop a mixture onto a piece of parchment paper to form into a cookie and freeze for 15 minutes
Step 5
Put a spoonful of peanut butter in the center and cover with more of the chocolate quinoa mixture
Step 6
Freeze for 35 minutes and enjoy!
