Samoa Stuffed Dates

Ingredients

  • 2/3 cup shredded coconut 
  • 1/4 cup sugar free maple syrup/honey
  • 2 tbsp peanut butter 
  • 8 dates
  • 1/4 cup chocolate chips 

Instructions

Step 1

start by toasting your coconut flakes – I did this in a pan and mixed the flakes until they turned golden brown (medium heat for 5-7 minutes) 

Step 2

mix your toasted coconut flakes with maple syrup and almond butter

Step 3

cut your dates midway and stuff them with the mixture 

Step 4

melt the chocolate chips – melt them with 1 tbsp coconut oil for easier melting 

Step 5

pour the melted chocolate into a ziplock bag, cut the tip and drizzle on top of the samoa dates

Step 6

freeze for 20 minutes and enjoy!
