Ingredients

  • Rice paper
  • Greek yogurt
    (Optional) herbs – I used BrightFresh Microgreens rainbow mix
  • Fruits of Choice: kiwis, mango, strawberries
  • Yogurt dipping sauce – ½ cup yogurt with (optional) strawberry purée

Instructions

Step 1

Soak your rice paper until it gets a little moist

Step 2

Assemble your rice paper rolls: place your yogurt, then herbs/rainbow mix, kiwi slices, mango and strawberries

Step 3

Fold up the rolls

Step 4

Make the yogurt sauce: mix yogurt and heat up strawberries until juice comes out and strain – mix the strawberry puree with the yogurt. (Add some maple syrup for extra sweetness).

Step 5

Dip and enjoy!
